Celebrity chefs John Besh and Aarón Sánchez have a big announcement to make today. Horseshoe Casino Baltimore has revealed that the chefs will collaborate on a taqueria called Johnny Sánchez, which is expected to open within the casino when it debuts this summer.
And while the announcement has been very hush-hush and the press has been fairly vague about what the restaurant will offer as far as food, Besh revealed a few early details to Eater back in June at the Food & Wine Classic: “It's [going to be] fun, whimsical, farm-to-table tacos and a fun, casual Mexican food and tequila bar all in one. … Everything from goat cheese stuffed fried blossom tacos to his grandmother’s tacos with chicharron.” He continued, “Nothing is definite yet, but that's something we're kind of simmering on the back burner. I would like to have a couple Johnny Sanchezes out there.”
The two chefs, who can each boast extensive awards and television appearances, reportedly became friends long ago when Sánchez moved to Besh’s beloved New Orleans to work for another world-famous chef, Paul Prudhomme. Besh is probably best known for such well-regarded New Orleans restaurants as August and Lüke, and Sanchez - chef-owner of Mestizo in Leawood, KS - is also the co-star of the popular Food Network series Chopped, among others.
The duo’s first collaboration - a space of some 6,100 square feet with seating for 222 - will feature locally sourced and responsibly farmed and fished ingredients, a bar heavy with tequilas, mezcals and bourbons, as well as occasional live entertainment and a more clubby vibe at night. Caesars Entertainment Corp. is the lead investor and will operate Horseshoe Casino Baltimore, which will be located at 1525 Russell St. on Baltimore’s south side.
