Adriano Paganini (restaurateur behind Beretta, Starbelly, Delarosa, Super Duper, Lolinda & El Techo) opens Uno Dos Tacos today on Market Street, starting with lunch (10:30 AM - 3 PM) and with dinner to come eventually. In a 4,500-square-foot space marked by hot pink chairs, yellow bar stools, communal tables made from butcher wood and cinder block and string lights draped over picnic tables in the outdoor patio, you can watch tortillas being made while you wait for your tacos. It's all built around a simple quick-service equation: you choose a form (taco, burrito, salad or plate), then choose a protein: asada (beef), tinga (chicken), carnitas (pork), lengua (tongue), pescado (fish), or vegetarian, and wait a few minutes before getting your order.  Five salas (fresca, chipotle, tomatillo, roasted, tomato) are in the house to punch it up. We're told the wild, net-caught cod fish taco (beer battered in a chipotle crema with cabbage) is modeled after the fish taco at Guadalajara’s Avenida La Paz, a beloved taco stand. While a full bar is in the works, you can still get house agua frescas, wine and Mexican beers. Better yet, everything is under $10.
