Lots of cooks get schooled on TV by chef/restaurateur Hugh Acheson (Five & Ten and The National in Athens, Atlanta's Empire State South), but you'll soon have a chance to brush up yourself, since his latest book, Pick a Pickle: 50 Recipes for Pickles, Relishes, and Fermented Snacks, is coming out on March 25. The 104-page "nontraditional" book is actually more of a booklet, with recipes presented on individual cards that fan out from the center, as Acheson revealed in an Instagram post Tuesday night.
A pickling guide is a fitting publication for the chef. Well before he published his award-winning cookbook A New Turn in the South in 2011, he was garnering wide attention for his vinegary solutions, as when he provided Esquire with this recipe for his bread-and-butter pickles back in 2009, before Top Chef and Empire State South put him in the national spotlight.
Pick a Pickle is currently available for pre-order from most major online outlets. Can't wait until March, Atlanta? Empire State South features numerous pickles, both on their own and in composed dishes, on its menu.
Expect more Acheson-related news soon, as the restaurant he's opening with executive chef Whitney Otawka, Cinco y Diez, is set to debut next week in Athens.
