Monday, September 1 is a holiday. Chef Josh Lewin, though, is getting back to work.
Not that he ever stopped; since leaving Beacon Hill Hotel & Bistro earlier this year, our recent 30 Under 30 honoree has launched a pop-up, Bread & Salt Hospitality. And on Labor Day it takes up semi-permanent residence at Wink & Nod, replacing the outgoing duo Whisk in a "culinary incubator program" that will see the South End spot hosting talented toques for six-month (or so) stints. We also recently learned the sweet news that the bread and dessert programs will be led by sous Kate Holowchik, the mastermind behind those fantastic Fernet bon bons you've been popping at jm Curley.
And now, here's your first look at the full menu that Bread & Salt is bringing. A charcuterie section has selections like cured Mangalitsa pork, a rare heritage breed of pig known for its fabulous fat. Small plates include a lobster curry with pork rinds and pickled onion, and a consommé of fried green tomato, green tomato chutney, and truffled tomato. Hearty entrees like a 10-ounce sirloin with anchovy sauce and bone marrow croquette round it out.
As appearances by raita and masala on the menu might suggest, there's a hint of Indian and Southeast Asian influence threaded throughout. Those will take center stage on Monday nights when, in conjunction with Wink & Nod's weekly "Tiki Night" cocktail program, Bread & Salt will spotlight a special, rotating "South End Night Market Menu" that looks to Southeast Asian food markets for inspiration. Since September 1 is a Monday, Bread & Salt will launch with that limited but creative array of tastes, which will include saffron rolls with lobster butter, fish head curry, a traditional Goan coconut pudding, and more.
