Oysters: We love them, especially in summer. We love them raw, and we love all types. (You can find our guide to many of the most important ones to try right here.) And we love them in slightly less healthful forms, like - well, fried. But sometimes we want to indulge without sacrificing sophisticated environs; humble seafood shacks just won't do. So we were happy to discover this dish at the Rialto bar: tempura oysters ($14) that give a slight Asian inflection to the menu at star chef Jody Adams' stalwart Italian. These oysters are tempura fried and topped with horseradish aioli, pickled mustard seed and spicy cabbage. Divine, and don't forget: If you want to keep it simple, Rialto offers $1 freshly shucked oysters from 5:30-7:30 PM every Monday night. The rest of us will be tipping back a few cocktails and diving in to these. 1 Bennett St., Cambridge; 617-661-5050
