Word on the street is it's National Cheeseburger Day, making it the perfect time to pay tribute to a Chicago cult classic: The Au Cheval cheeseburger.
In a city full of delicious burger options (Edzo’s, Kuma’s Corner, Butcher and The Burger), Au Cheval stands its ground by respecting the four pillars of burger stellarness: meat, bun, cheese and toppings. Let us paint a picture.
Two thin patties come griddled to perfection, so the outside is slightly crisp but the inside remains pink and juicy. Cheddar cheese not only melts down the top patty, but is also sandwiched between the two slices of prime beef - Juicy Lucy-like, sans processed cheese. The bun, made at local Z Baking, is impossibly fluffy and has a buttery, golden exterior that comes lightly toasted on the bottom and smeared with mild dijonnaise inside. The finishing touch is sliced dill pickles, made in house, that add a bit of crunch to the gooey, delicious burger. Fried egg and think-cut bacon are optional additions to the already masterful work of art.
If ever there were a day to indulge, this would be it. Happy Cheeseburger day, everyone.
