Dealer’s Choice: Ghostfire at 312

Last year, 312’s head bartender Dan Andruss spent some time traveling through Italy and Israel. While spending time in Ramallah, in the city’s West Bank, he discovered a small Spanish Bar partial to bianco vermouth. Andruss grew fond of the spirit, and upon returning to Chicago, he incorporated it into his beverage program. “I’ve created several different cocktails using the Italian vermouth,” he said. “I love the sweet and savory notes it can bring out in a drink.” One of his favorites is the Ghostfire, a twist on the classic martini made with bianco vermouth, orange bitters and Bols Genever.
