Jay Schroeder Takes Over Frontera’s Beverage Program

As it turns out, Jay Schroeder can't turn away from tequila. In 2012, he left his post at the agave-soaked lounge Double A - a job that earned him a spot on Zagat’s 30 Under 30 list - to mix more traditional cocktails at Bucktown's Red Door. He left that gig last month and is now back managing a tequila-driven bar program at Frontera Grill, Topolobampo and XOCO.

“I'm super excited to work with such a passionate group of people and focus back in on my favorite spirits category: agave,” Schroeder said. “There are also a lot of very exciting things in the pipeline here and I look forward to being a part of all the new things going on.”

Schroeder is stepping into a large role as bar manager and chief mixologist at all three Rick Bayless properties. This includes incorporating a new bottled cocktail program at XOCO as well as reviving the spirits menus at Frontera and Topolobampo. Schroeder said many of the cocktails that regulars have come to expect at the River North institutions will remain on the menus, but he's adding seasonal drinks made with local sprits that will change every two months.
