Moto’s new tasting menu offers a literal taste of every dish to come. The first course of the twelve-course dinner is a lineup of preview bites, served on a single segment of log. The following courses stay true to Moto’s boundary-pushing cuisine with dishes such as the “River Course” that uses the flavors of everything bagels and cream cheese or the edible picnic served on mini grass. The preview bites include a segment of charred baby corn as well as a bit of maple-cured egg yolk. Altogether the meal is an experience that showcases unique culinary techniques and presentations.
