Many a Texan grew up with pimento cheese sandwiches, typically made from cheap white bread and store-bought shredded-cheese-and-mayo spreads. But pimento cheese is all grown up and, like most every comfort food out there, enjoying a moment in the spotlight thanks to elevated versions served as dips, on sandwiches and burgers, and even deep-fried into balls (because State Fair withdrawals have likely set in already). Here are 10 must-try variations on pimento cheese around Dallas.

  • Toasted pimento cheese at Remedy
    At this Lowest Greenville haunt with a soda-fountain-inspired menu, pimento cheese is spread generously on toasted country white bread and served with a side of cream of tomato soup for dipping.

  • Texas pimento cheese sandwich at Society Bakery
    It all starts with sharp cheddar at this Lower Greenville bakery cafe, then pickled jalapeño and mayo are added. The sandwich can be served hot pressed or cold on white, wheat or croissant. Add thinly sliced red onion and tomato at no additional charge. Includes housemade pickled beet salad and choice of chips or caprese salad.

    Pimento cheese is rolled into balls, battered and deep-fried on the new menu from chef Vijay Sadhu at this Victory Park New American restaurant inside the W Hotel. Served with chile-lime aïoli for dipping.

    At chef John Tesar's modern American steakhouse inside the Highland Hotel, he grills up a juicy half-pound burger and tops it with a mound of pimento cheese, which melts into the patty itself. Served with salsa verde fries, it's a most memorable burger experience.

  • Fried green tomato and smoked pimento cheese sandwich at Hattie's
    This Bishop Arts eatery knows a thing or seven hundred about Southern cooking and this sandwich is a prime example. Fried green tomatoes are layered with smoked pimento cheese, applewood-smoked bacon and iceberg lettuce on soft, fresh sourdough. Better than a BLT, much more exciting than a grilled cheese.

    For those who want more variety, this starter at this recently opened Lowest Greenville American eatery comes jam-packed with chef-owner Nathan Tate’s housemade pimento cheese (bottom right corner), made with extra sharp cheddar, chèvre goat cheese, finely grated Parmesan, mayo, minced peppadews and minced pickled onions and shallots.

  • Pimento cheese sandwich at Cold Beer Company
    At the intersection of Expo Park and Deep Ellum, this beer bar is serving up some great pub food inside and on its spacious dog-friendly patios. The pimento cheese can be ordered as part of the chip-and-dip starter, but it's worth keeping for yourself as a sandwich. Made with smoked Gouda and jalapeño, the spread is topped with applewood-smoked bacon and chopped tomato and served melty on toasted sourdough with chips.

    This Uptown eatery dedicated to the flavors of Texas serves up a starter that's a fun pimento-cheese take on chile con queso. Pimento cheese made with good ol' American cheese and pickled jalapeños is served with smoked salt potato chips.

  • Billionaire bacon burger at Twin Peaks
    Even chain restaurants are in the game of pimento cheese, including this popular sports bar. The bacon-laced burger patty is topped with made-from-scratch Sriracha pimento cheese, bacon, leaf lettuce, caramelized onion, bacon beer mustard and bacon mayo. Currently, it's only available at the Addison and Las Colinas locations, but will be available at all locations on November 2.
