Combining a restaurant with a fresh fish counter, AmberJax Fish Market Grille is opening its doors at Trinity Groves tomorrow. The news comes hot on the heels of the announcement this week of Chino Chinatown’s December 30 opening, giving the burgeoning West Dallas entertainment development a fresh infusion of buzz - not that it needs it.
Led by chef Larry Williams and manager Karen Williams, AmberJax will fly in seafood from all over, including Alaska and South America, both for purchase to take home or immediate consumption. The restaurant’s cuisine will have Cajun influences, as seen in dishes such as a Creole-seasoned crab cake, a Louisiana boudin appetizer, blackened fish selections, shrimp and grits and Cajun ’Caps, crab- and crawfish-stuffed mushrooms. Raw oysters and a gumbo of the day are other dinner menu highlights. AmberJax is diving right in with lunch service from the get-go, too, with options like Acadiana-style fried po’ boys and seafood tacos, as well as starters, salads and entrees borrowed from the dinner menu.
