First Look: Dig Into Steak and BBQ at Killen's STQ

The gist: Meat maven Ronnie Killen has opened his first Houston restaurant, meaning locals don't have to trek to Pearland for his signature smoke-kissed steaks and barbecue. The new spot, his fourth concept, marries influences from Killen's Steakhouse and Killen's Barbecue under one roof (he also owns Killen's Burgers, which opened earlier this year). 

The food: ​In addition to fan-favorite, dry-aged rib-eyes and New York strips, expect rich, hearty fare like smoked short-rib ravioli with port wine cream demi and shaved black truffle (pictured above). There are also beef short-rib tamales (pictured below) and smoked beef filet, a riff on boeuf bourguignon with consommé, mushrooms and bonito flakes. Many of the dishes, including the steaks, are served on personal-sized butcher blocks. 

Even desserts are kissed with smoke from Killen's signature blend of pecan, mesquite and oak — think smoked chocolate cake (pictured below), first developed for a dinner at the James Beard House. There's even a decadent bacon tres leches bread pudding.

The drinks: Expect signature cocktails heavily anchored by Texas-based spirits, local craft beer on draft and a 100-label wine list. A wine rack from the steakhouse was moved to STQ "for good karma." 

The space: The intimate, yet convivial setting features just 15 tables plus a nine-seat bar. Dropped wooden ceiling panels help absorb chatter (a carry-over feature from the building's prior tenant). High-end touches in the dining room include Frette linens plus Laguiole steak knives with stunning wooden handles.

The details: Located near the intersection of Voss and San Felipe, Killen's STQ is open Monday–Thursday 4 PM–9 PM, and Friday and Saturday 4 PM–10 PM. Closed Sundays. Valet parking only.
