Best Thing We Ate: Squid Risotto at Restaurant Cinq
Refined would be a word that comes to mind when envisioning the Montrose gem, La Colombe d'Or. There's an old-world elegance that permeates the boutique five-room hotel and its cozy downstairs Restaurant Cinq. That elegance also found its way into a warming bowl of risotto topped with grilled squid, which was a recent lunch special.
The base of the dish was rich and creamy and delicately dusted with truffles, with crispy caramelized shallots from Knopp Branch Farm studded throughout. The truffles added a punch of savory while the shallots provided a pleasant variation in textures. On top sat a tender grilled squid that had been caught just off the Texas coast, seasoned simply and garnished with sprouted kale. It was both simple and sophisticated, as well as utterly enjoyable.
