7 Vegetable Dishes Even a Carnivore Will Love

The sun is shining and summer is on it's way, which means there are plenty of in-season vegetables to enjoy. And if you think getting excited about veggies is just for crunchy, hemp-wearing vegans, these seven dishes are likely to surprise even the carnivores amongst you.

  • Fried Mushroom Mousse and Rosemary Scone at Vanilla Black
    This artfully presented dish is as much a feast for your eyes as your taste buds. Savour the contrasting textures and flavours of the salty scone, smooth mousse and accompanying mushy peas and horseradish, fennel and whipped lemon. You won't be disappointed.

  • Organic Bangers and Mash at Manna
    Primrose Hill's posh vegan restaurant turns this classic British dish into a veggie culinary masterpiece. Sausages made from cashew cheese, fennel, herbs, spices and pumpkin and sunflower seeds are topped with light and crispy onion rings. The mash is made from a mix of vegetables and spring potatoes with a layer of broccoli. Instead of gravy expect a delicious leek and thyme jus.

  • Rasa Kayi at Rasa
    A south Indian speciality, this vegetable curry is a spicy mix of beans, carrots, cauliflower and potato cooked in a garlic, ginger and fennel sauce. Eat it with bread or rice as you would a normal curry, and enjoy this light and fresh take on Indian food.

  • Chilli Con Veggies at Grain Store
    Vegetables are the main event at chef Bruno Loubet's King's Cross restaurant so if anyone can give this Mexican favourite a vegetarian makeover it's him. The hearty dish includes well-cooked and perfectly spiced vegetables, mixed grain rice and sour cream. It's lighter than the meaty original but just as satisfying.

  • Valdeón Cheesecake at Nopi
    Yotam Ottolenghi's savoury cheesecake is similar to a quiche, made with aubergine and pickled beetroot and topped with fragrant hazelnut, thyme and honey. It's a fresh and comforting dish that is served in the middle of the table in a warm copper pot but - like all good cheesecake - it's hard to resist and not easy to share.

  • Beetroot Ravioli at Bistrot Bruno Loubet
    A light and healthier alternative to stodgy cheese pasta, these wafer-thin ravioli's are filled with eye-catching purple beetroot. The sweetness of the pasta is offset by salty Parmesan breadcrumbs and a beautifully crisp rocket salad drizzled with balsamic vinegar.

  • Radishes, Black Sesame and Gochuchang at The Clove Club
    Plates of vegetarian food at this Shoreditch restaurant look like mini edible Japanese gardens. These leafy radishes are served with gochuchang - a Korean fermented chilli paste with a mayonnaiselike texture - and sprinkled with crushed black sesame seeds. It's a brilliant peppery, spicy and nutty mix of flavours to start off your meal.
