First Look: By Chloe, a Vegan Spot in 365 by Whole Foods

The excitement about a new Whole Foods Market, even if it's the new millennial-friendly 365 branded concept, is palpable in Silver Lake. The parking lot was packed on day one (and no, Sonic Youth's Kim Gordon did not get bit by a coyote there), shoppers seem happy with the prices, and who doesn't love a good DIY iced tea bar? But one thing this store has that others don't is its own vegan restaurant, By Chloe. The New York import from chef Chloe Coscarelli and Samantha Wasser sports an all plant-based menu, including its popular burgers, salads and air-baked fries, plus so much more. 

The restaurant, which has its own seating and space, features housemade everything, including vegan cheeses; burger patties made of lentils, beans, tempeh and other non-meaty things; all the sauces and condiments; plus cookies, muffins and pastries. There's a full juice lineup (of course), plus smoothies and a daily lemonade offering. Ice creams are dairy-, gluten- and nut-free and come in flavors like Kale Cookies + Cream and Coffee Chia Chip. There's enough to pull in vegan shoppers and non-shoppers alike, and maybe even a few omnivores. Take a look at the sneak peek below. Hours are 10 AM-10 PM, Sunday; 11 AM-10 PM, Monday and Tuesday; 11 AM-11 PM, Wednesday through Friday; and 10 AM-11 PM on Saturday.

    The full lineup from the all-day menu includes the guac burger, a patty made with black beans, quinoa and sweet potatoes and topped with corn salsa, onion, guacamole, tortilla strips and chipotle aioli; the classic burger, a tempeh-lentil-chia-walnut patty topped with pickles, onion, beet ketchup and a "special sauce"; avocado toast, which of course they must have; and a portobello and veggie meatball sub with marinara, sweet peppers, basil pesto, cashew mozzarella and almond Parmesan. The air fries come regular or sweet potato.

    For salads, there's the popular quinoa taco salad, which has spicy seitan chorizo mixed with black beans, sweet corn, avocado, tomato, tortilla strips, crema and agave-lime vinaigrette.

    Can't get out of a Whole Foods without a cold-pressed juice, right? The restaurant serves an assortment, both served fresh or in bottles for easy grab-and-go. Flavors include The Giving Tree (kale, spinach, wheatgrass, apple, lemon), the Junkie (kale, spinach, wheatgrass, cucumber, parsley and lemon), and the Cuckoo's Nest (beet, apple, romaine, lemon and ginger). There are also seasonal smoothies, like pear with matcha, spinach, banana, pineapple, lemon and ginger.
