The next project for Paul Hibler's "restaurant incubator" is East Borough, a French-Vietnamese concept from Orange County. Owners John Cao and chef Chloe Tran opened the original in Costa Mesa in 2010, and with the help of Hibler, the owner and creator of Pitfire Artisan Pizza and Superba Snack Bar, will bring an outpost north to Culver City this fall. East Borough offers a mix of French and Vietnamese cuisine, things like banh mi sandwiches with lemongrass pork and pork belly, pho-inspired sandwiches, spring rolls with pork, shrimp and chives and flame-grilled pork sausage with spicy tomato salsa. The new spot will be more polished than the original, with telephone-wire light fixtures, pendant lights, black brick and white ceramic tile floors. The restaurant will open for lunch and dinner (9810 Washington Blvd.).
