Could Turkey Tails Be the Next "It" Part?

An oft-neglected part of the bird, turkey tails are experiencing a moment courtesy of Morgan's Brooklyn Barbecue. We love the idea of letting no part of the animal go to waste (not sure about the waddle, though), and restaurants like The Brooklyn Star have served up fried pig tails for years. Morgan's flash fries four featherless pieces of the turkey's caboose and adds a bit of spice, along with collard greens and seasoned corn bread to round out the dish. At $12, it's pretty easy to give it a shot, and you can also work your way up to it after Thanksgiving, since it's available year-round for lunch and dinner (718-622-2224).
