Chef Dave Pasternack, whose partnership with Mario Batali and Lidia Bastianich includes seafood enclave Esca along with the fish counter at Eataly, is going solo for his next project. Pasternack noted he's taking over the recently closed Bistro La Promenade in Chelsea, with plans to open another Italian seafood joint called Barchetta with the venue's previous owners. The menu is expected to emphasize a variety of Italian cooking techniques and seafood much like his current dining rooms. However, the chef isn't fleeing Hell's Kitchen just yet, as Pasternack plans to stay on operating the kitchen at Esca while his chef de cuisine, Christian Goerner. will head up the new restaurant. While several elements like the white barble bar and kitchen will remain untouched, Pasternack will renovate the main dining room, and expects to debut the new restaurant sometime in March.
