Gabrielle Hamilton’s cozy East Village hideaway, Prune is one of our all-time favorites. The restaurant is no-fuss, not unlike the menu, and when we stopped by to try the bone marrow ($17), a longtime staple, it didn’t disappoint. The dish is served simply, allowing the animal fat to take center stage, along with sweet spoons, perfectly sized to purge the goodness out of each bone. There’s a small parsley salad and grey salt on the side, with toast points to be used as a vessel for the warm, melt-y marrow. It’s no surprise that this classic item has stayed put. (212-677-6221)
