When it comes to sushi, generally we're purists, but we'll admit, when we saw Beyond Sushi in Chelsea Market, we were too intrigued not to try it. Hell's Kitchen finalist Guy Vaknin has created a bevy of interesting flavor combinations within the vegan roll selections, including the ones we tried - the popular "Spicy Mang" and the "Pickle Me." While these won't satisfy your cravings for a spicy tuna roll or unagi, if you're testing out a plant-based diet, visiting this storefront isn't a bad way to start. Each order comes with eight pieces. The "Pickle Me" consists of six grain rice, gobo, carrot, pickled daikon, avocado and a carrot ginger sauce, and the "Spicy Mang" is created with black rice, avocado, mango, cucumber, spicy veggies and a toasted cayenne sauce. Both are gorgeous, and provide a pleasant mix of slightly salty, savory and sweet flavors (though we felt the sauces were unnecessary). Can't say we're giving up traditional sushi quite yet, but when we have vegan friends in town, we know where to take them ($6.50 each; 212-929-2889).
