A couple weeks ago Piora quietly opened in the charming West Village space that formerly housed The Goodwin. Head bartender Shinya Yamao is behind the ridiculously good cocktails at the marble bar that dominates the front room of the eatery, and he has a blade that he uses to carve the gigantic cubes into just the right shape. It's quite a feat, and as our companion noted "being able to do that is definitely a sign that these guys aren't drinking behind the bar."
The list offers creative mixes including one that was our unexpected favorite. The Yes Ma'am is a blend of Maker's Mark, St. Germain and watermelon juice. Did we think that an almost neon-pink libation filled with fruit would be one of the best new cocktails we've had in recent memory? Nope. But the bourbon blended with the sugary (but not too sweet melon) for a perfect mix. Yamao, when it comes to this summery beauty, we say yes sir (and not just cause you're flashing that knife).
