First Look: by CHLOE Brings Fast-Casual Vegan to Greenwich Village
The gist: Vegan cookbook author Chloe Coscarelli has opened her first restaurant on the iconic corner of Macdougal and Bleecker streets in Greenwich Village. Known for her veggie-focused cooking, the chef has partnered up with ESquared Hospitality (the group behind the BLT restaurants) to debut by CHLOE, a fast-casual concept specializing in 100% plant-based fare.
Spicy Thai salad
The food: The menu of health-conscious eats include hearty entrees like a burger made with a grain-and-nut patty and beet ketchup (pictured above) and pesto meatball sub dressed with cashew mozzarella, alongside lighter market-driven specials (spicy Thai salad, smashed avocado toast). There are also plenty of Coscarelli's signature sweets, ranging from vegan cookies and cupcakes to gluten-free ice creams (salted caramel, roasted banana bourbon) all made in-house.
The drinks: You'll find Stumptown coffee, PANATEA matcha and bottles of cold-pressed juices (also available as shooters or in flights), plus some boozy options, including bottled craft beers, sustainable wines and cocktails prepared with organic liquors and the aforementioned juices.
Oatmeal raisin cookies
The space: ESquared creative director Samantha Wasser (a 30 Under 30 alum) and Dekar Design designed the 35-seat shop together, creating a space that resembles a home kitchen. The airy, laidback shop sticks to a black and white theme with pops of color coming from bright metal chairs, a striped floor, hand-painted tiles and vintage hemp banquettes.
