It seems that Jersey City may be the new culinary hotbed for chefs. It began with Thirty Acres, followed by Top Chef star Dale Talde, who will set up shop with two restaurants in JC. And the latest comes from chef Brian Dowling of Park & Sixth Restaurant and Bar, who opens Park & Sixth Gastropub today in the Paulus Hook 'hood. We’ve been told that the offshoot will be turning out upscale bar eats like dry-aged rib-eye sliders, tomatillo and buttermilk-battered onion rings, brie mac 'n' cheese and Dowling’s housemade “muzz" (pictured), as well as bigger plates. There’s also a raw bar, craft beers and a very solid cocktail menu.
