A Jose Andres alum is now running the show at Red Owl Tavern, the restaurant on the ground floor of the Hotel Monaco next to Independence Mall. Jorge Chicas was most recently executive chef at The Bazaar in Beverly Hills, and before that he opened Zaytinya in DC. In Philadelphia, he plans to build on the restaurant’s American tavern fare with new menus that will launch right after Restaurant Week. Stay tuned for details.
Former Manayunk Brewing head brewer Doug Marchakitus will make a return to his roots this week when he takes the helm at the Iron Hill North Wales brewhouse - it’s at that same restaurant that he first became interested in beer, when he was a server there. Marchakitus has just finished his first seasonal, an ESB (extra special bitter), and it will be released during the first week of February. Before that happens, he’ll oversee two other releases: The Grand Inquisitor (a Russian imperial stout) on this Thursday and Peanut Butter Porter on Friday, January 24.
One more top toque change to note: Jose Olmeda is now overseeing the kitchen at Rosa Blanca, the just-opened Jose Garces Cuban diner at 707 Chestnut. Eater confirmed the early reports at City Paper that opening chef Yun Fuentes - a longtime Garces Group chef who got his start at Amada - is no longer with the company. No details on what went down, but we wish Fuentes well.
