Maryjane’s Candied Bacon Burger

Tucked into the heart of the Gaslamp, Maryjane’s Candied Bacon Burger is more a meatapalooza than anything else. Chef Joseph Cotillon wants to bring the burger experience to a new level, so he starts by grilling off a half-pound patty made from ground pork and chuck steak, then tops it with a spicy pepper jack cheese. Many chefs would stop here. But Cotillon goes on to add a serving of slow-roasted pulled pork mixed, lapped in hickory-smoked barbecue sauce, and strips of candied bacon. A final flourish of cabbage slaw tossed in a champagne vinaigrette adds tang and crunch. Pair it with Stone Brewing's Stone Smoked Porter and you have yourself a truly gut-busting, palate-exploding meal. The only other crucial addition? Napkins.
