3 Super-Chill, Must-Try Asian Noodle Dishes

We don't want to let the Best Summer Ever end without a shout-out to some of our fave chilled noodle dishes. Happy slurping!

1) Bun Thit Nuong at Pho Viet Anh

​This refreshing salad runs hot and cold, with grilled pork resting on top of chilled rice noodles, pictured above. Pour the sweet dressing, seasoned with fish sauce, over the top and toss with the chopped romaine, shredded carrots, basil, mint and bean sprouts. This Queen Anne pho place gets bonus points for presentation, plated on a massive, shallow bowl for easy access.

2) Hiyashi at Jinya Ramen

This dish has everything we love about ramen, the pork chasu, the soft-cooked, soy sauce-marinated egg, the spinach and sprouts and shredded red ginger. But instead of the steamy broth, there's an addictive sesame sauce that's so good you'll wish these cool noodles was on the menu year-round. It's only offered through September, so get it NOW.

3) Zaru Udon at Fuji Sushi

Who's up for a dip? We're talking about dunking cold udon noodles into a umami bomb called mentsuyu, a sauce made with sake, mirin, soy sauce, kombu (aka kelp) and bonito flakes. Don't wear your best dry clean-only shirt when eating this one because it's wonderfully messy.
