If you don't have a bottle of sriracha in your fridge right now (and you want one there), you should probably start panicking. Hot-sauce manufacturer Huy Fong Foods is restricted from shipping any more sriracha (and two other sauces) until mid-January because the California Department of Public Health has begun enforcing stricter guidelines. Since the sauces are not cooked, extra safety measures are required and the department is requiring that batches of each be held for 30 days before they can be shipped to distributors.
