José Andrés to Open China Chilcano in Penn Quarter

José Andrés is at it again in Penn Quarter, announcing late this afternoon that he intends to open a restaurant tentatively called China Chilcano in the former Olsson’s Bookstore space at 418 Seventh St. NW. The Washington Post reports that the Chinese-Peruvian fusion concept will likely open in spring 2014, featuring Peruvian dishes that employ Chinese technique. Andrés, the man behind local institutions like Jaleo, Zaytinya, Minibar and Oyamel - all in close proximity to this new space - has dabbled with mixing Latin and Asian flavors with his Mexican-Chinese mash-up, China Poblano in Las Vegas.
