Best Thing We Ate: A Summery Scallop Special at Food Wine & Co in Bethesda

The Dish: Scallops with corn and shishito peppers

Tasting Notes: Food Wine & Co chef Michael Harr offered us a taste of this appetizer special the other night, which normally comes with three day boat scallops. The dish also features grilled corn and sliced shishito peppers tossed with a buerre fondue, attaining other layers of flavor from huitlacoche (a naturally occuring corn fungus traditionally used in Mexican cuisine), a corn vinaigrette, fresh mustard greens and sesame seeds. Harr calls it “simple,” but we know a lot of care and detail went into making that dish. He might not have it on the menu every night, but Harr likes to play with those flavors during the summer and says he’s offering a version made with Alaskan king salmon and head-on prawns with cornbread tonight. We recommend you head over there to give it a try.
