Tasting Notes: If you haven’t figured it out by now, chef Jeremy Shelton’s Blackboard Menu is something you should pay close attention to each time you visit. Here, he offers his most creative dishes, like raw oysters with such masterful enhancements as pickled ramps and tomato gelée or a tiny dice of cucumber, chile oil, mignonette sauce, balsamic gelée and dashi espuma, which we wrote about here. This time, he wowed us with a Korean-inspired bone marrow preparation — without a doubt the best bone marrow we’ve ever had. He marinates it in a galbi-style blend of kimchee, eel sauce, brown sugar, soy, ginger, garlic and dijon, then roasts it until the sauce caramelizes. It’s topped with crispy shallots, peanuts, sesame seeds and cilantro and served three per order with a bao bun filled with radish salad. We admit to not always loving bone marrow — it’s pretty darn rich. But this version gave it texture and a burst of Asian flavors that managed to surprise us in the best possible way.
