The Dish: Seared Skate Wing at Menu MBK

The Price: $25

Tasting Notes: Our first foray into chef-owner Frederik de Pue’s new Menu MBK in Penn Quarter included this masterfully executed dish of seared skate wing. The main event received the perfect amount of crust in the pan while keeping the fish moist and tender inside. But all the other elements on the plate really elevated the whole enterprise: a creamy parsnip puree, eggy sauce gribiche, lemon brown butter, freshly picked parsley leaves and the whimsical flower-shaped fried parsnip chips all married into a perfectly balanced union. Do yourself a favor and start with the fried Jerusalem artichokes and a Winter Chai Negroni, followed up with a glass of Sancerre to pair with that skate.
