The pastry chef shuffle continues with the arrival of Reggie Abalos in the kitchen of Trummer’s on Main in Clifton, VA. Abalos has worked at Poste, Table and the now-shuttered Citronelle and Galileo during his more than six years in the DC area.
Two desserts diners can look forward to are a chestnut cake with chestnut puree and Venetian olive oil gelato as well as cinnamon-sugar beignets with Bailey’s pastry cream. Housemade gelati and ice creams will also be offered, including a popcorn gelato served with butter sable and caramel corn.
The new executive pastry chef intends to change the dessert menu every couple of weeks or so to keep things as seasonal and interesting as the savory menu.
“I am looking forward to working with chef [Austin] Fausett and the Trummer's team to create a pastry program that enhances the restaurant's reputation for exquisite, unforgettable food,” says Abalos (703-266-1623).
