Poste Moderne Brasserie, the restaurant in the Hotel Monaco in Penn Quarter, announced its replacement for longtime chef Dennis Marron today. Kyoo Eom, who most recently served under chef Bertrand Chemel at 2941 Restaurant in Falls Church, has taken over the executive chef spot.
Among Eom’s other accomplishments are stints training under chef Andrew Carmellini at Daniel Boulud’s Café Boulud. He also has worked at Boulud’s DB Bistro Moderne. Not surprisingly given his training, the South Korean native who studied at Le Cordon Bleu at Brown College specializes in French dishes and will roll out a new menu at Poste this fall. His takes will include a French onion soup that gains flavor from short ribs; asparagus-wrapped halibut; and côte de boeuf for two.
In the meantime, diners can preview a few dishes during the upcoming summer Restaurant Week, which takes place August 11-17.
