Tallula and EatBar Score a New Chef

Tallula and EatBar, the side-by-side restaurant duo in Arlington that's owned by Neighborhood Restaurant Group, quietly gained a new chef right before Thanksgiving.

Robert Rubba, who previously served as chef de cuisine at Azur until its recent closing, has introduced such dishes as grilled pork belly with apple, kimchi-kraut and maple glaze; pan-seared black bass with heirloom carrots, Tokyo turnips and lemongrass broth; and crispy duck breast with chestnut stuffing, celery root, glazed onions and spiced duck jus.

Rubba moved to the area from Philadelphia, where he held the post of executive chef for the also shuttered Le Bec-Fin. In addition, he has worked with such notable chefs as Laurent Gras, Todd English and Gordon Ramsay (703-778-5051).
