This Denver-based fast-casual chain favors seasonal, farm-sourced ingredients in its health-conscious American menu (salads, sandwiches, pizzas, Paleo-friendly plates), which includes vegan and gluten-free options as well. A few craft beers and wines by the glass round things out, while reclaimed-wood accents add warmth to the airy, sleekly contemporary decor.

While certainly a good option among the other airport food, I was extremely disappointed with the food and service here. The non-airport ModMarkets are fast and healthy with great service and caring preparation of the food. That's not what I experienced. I get that the options for employees and food preparation is more challenging, but the staff was standoffish, not pausing their conversation when I came to the counter and food was different temperatures bite to bite. The taste was good, but made it not appetizing. Not what I expect from a ModMarket.

Scaled down menu/version of the healthy concept restaurant. Even with their more limited airport menu (no pizzas, for example), I was happy with all of the gluten free options. The Chili + Eggs was great, and even better served with gluten free toast, which is very rare for an airport meal. Quick service on a busy morning at DIA.

I ordered the chipotle breakfast sandwich; OMG it was awesome!! (A little messy, beware of saucy drips)
