After work go-to... Great space, comfortable bar, always solid cocktails and service. The burger is a must. Pricing is very reasonable for Soho, only negative is the bar sometimes gets a bit full so we have to move to one of the communal tables which generally has lots of space.

Located in the old Trump Hotel Soho, Spring & Varick (located on the intersection of Spring St. & Varick St.) does a good job of exhibiting a chic and elegant environment. We used a Gilt City voucher and while there was some initial issues with redeeming it (make sure you download the app!), the manager was very gracious throughout the process and patient. The food was very good yet not too pricy at around $25 – $35 for most dishes. It certainly won’t win any Michelin stars, but it you definitely can’t go wrong with most selections here. I ordered the tuna tartare and cauliflower rollups as appetizers and both went beyond my expectations. The cauliflower rollup in particular was very unique! For mains, I ordered the Black Garlic Salmon. Cooked to a tantalizing medium rare, it was quite appetizing and is definitely a class above the usual restaurant. The eggplant puree paired very well with the salmon. Overall, Spring & Varick is a good choice for a Friday / Saturday night dinner. While not overpriced, it’s not great value either, so definitely don’t forget your wallet!
