State Bird Provisions
Dim-sum-style American small plates
American · Fillmore District/Western Addition · $$$$
The Zagat Review
Ever "a game-changer" , this "totally hip" Fillmore District American from husband-and-wife team Stuart Brioza and Nicole Krasinski will "blow you away" with the "bold flavors" of its "spectacular" seasonal small plates served by "engaged" staffers from "roving carts" (think "dim sum for the foodiest" ); given a "cutting-edge" "vibe as exciting as the food" , reservations remain "ridiculously tough" , though walk-ins can "stand in line" before opening time "and hope."

Loved this cool understated restaurant. The service was super friendly and the innovative cuisine was delicious. We truly liked the dim sim serving style. It gave us an opportunity to taste many different treats. We also ordered dishes from the menu. Nice to combine. Also enjoyed the positive energy in the restaurant. Cool, cool. cool. They have a new cookbook but I rather return than try to cook!

Very quirky experience! Staff members head over to each table with trays of one type of food, and explain the dishes on them. You let them know whether or not you want it, and if you do, you get one and the staff member mark it off on your menu. It's different each time, so good to check what they come up with next time. You can also order something from their more permanent menu, if racking up your bill by saying yes to everything isn't your thing. Their desserts are pretty good; I quite like the rose geranium custard tart.

Upscale American food served dim sum style - you can order from a menu, but mostly the staff bring around small servings of a variety of plates and you select only what you want. The plates vary from amuse bouche to tapas to appetizer sized portions of main courses. I've been twice and was always delighted with every plate. The food is notable for surprising and clever combinations of flavors and textures, very attractively plated, with a casual presentation. You will end up selecting many plates per person, which are generally priced under $10, and will add up to the $$$ total you would expect from a culinary restaurant. The downsides are that that all the plates are rich/fatty/spicy (so forget your diet restrictions), and reservations are hard to get - this place is as good as it's PR, so perhaps you won't mind the up front effort of getting in as much as I do.
