In the center of Rome between Piazza di Spagna and Piazza del Popolo, this rare vegetarian restaurant attracts artists who live in the studios lining this street. In such a setting, the owners decorated the walls with modern art. The chefs pay special attention to the quality of their ingredients, including extra-virgin olive oil, stone-ground organic flours such as bulgur, emmer wheat, and wild red rice from the Camargue, plus organically produced ciders, beers and wines. The sheep and goat cheese served here is aged in vine leaves. Try such dishes as spinach soufflé with deep-fried zucchini flowers and a Parmesan and truffle sauce, or crispy grilled polenta with smoked provola cheese and oyster mushrooms. A dessert might include walnut cake with dried fruit served with hot chocolate and soya ice cream.
