The long-standing controversy surrounding the consumption of horsemeat has heated up in recent years after the slaughter ban was lifted in the United States in 2013. Eating horsemeat is still a taboo in the U.S., but not as much in Canada, where equine dishes are frequently sought out by culinary enthusiasts. We took a trip up north to visit Toronto chef Jen Agg, who brings us to a local purveyor and prepares a sample of the popular horse tartare she serves at her restaurant, The Black Hoof.
