Chicken-Fried Rib-Eye at The Dawson

The latest project from restaurateur Billy Lawless (The Gage, Henri) has a location, a chef, a name and a version of bananas foster that requires engulfing an entire countertop in flames. A preview video for The Dawson, opening in September at 730 W. Grand Avenue, is helmed by Next and Alinea alum Rene De Leon. This teaser video shows De Leon preparing dishes that will be served in the industrial chic restaurant.

Items include chicken-fried prime rib-eye and bananas foster served on rum-soaked banana bread with candied pecans, ice cream and caramel brittle flambéed table-side. Grilled corn served with charred husks and whole fried fish also make an appearance, showing that the menu will take hearty fare and infuse it with the elevated techniques that De Leon picked up during his fine dining training.

Clint Rogers will run The Dawson’s beverage program, but a preview of those cocktails will have to wait for another video.
