How To: Break Down a Chicken Like a Pro

Breaking down a chicken is one of those things that a professional chef can do in about 10 seconds, while amateur home cooks might take 10 minutes. We went behind the chef's counter at Manhatttan hot spot Maison O to see chef-owner Tadashi Ono work his magic - watch him break down the bird in this video, and learn a thing or two along the way. Fair warning: it's not a pretty process, so the squeamish may want to avert their eyes.
