How To: Fillet and Cook the Perfect Fish

When we visited Toronto, we visited chef Susur Lee at his seafood-centric Bent to get some tips on cleaning and cooking the perfect fish. It might take a few tries, but with some practice, surely you'll get the perfect form on that fillet (and who knew about his paper-in-the-pan trick?).
